Pinwheel Cookies

1 c. Earth Balance butter (or Spectrum Butter flavored shortening)
1.5 c. powdered sugar
3 c. flour
1 tsp baking powder
1 tsp. salt
1 T. coconut milk
1 T. vanilla
1/4 c. Cocoa powder
1 T. espresso or coffee
Sprinkles

Directions:

  1. Cream the butter and powdered sugar
  2. Mix the flour, baking powder, and salt in separate bowl
  3. Add 1/2 of the flour/baking soda/salt ingredients to the butter/powdered sugar mixture and mix
  4. In the same mixing bowl, add remaining flour/baking soda/salt ingredients with coconut milk and vanilla and mix to form a large dough ball (add additional milk if necessary).
  5. Take half of the dough out of the mixing bowl. With the remaining dough in the bowl add the cocoa powder and coffee/espresso and mix until the dough is a smooth chocolate color
  6. Roll out both sets of dough into the same size rectangles and then stack them on one another. Run a rolling pin across them lightly to push the two sheets of dough together.
  7. Starting at the long side of the dough roll into a log (add sprinkles at the beginning of this step, if you want sprinkles)
  8. Refrigerate for 10 minutes
  9. Preheat oven to 350 degrees
  10. Remove dough and cut in 1/4 inch slices
  11. Bake for 8-10 minutes
  12. Let cool
  13. Enjoy
