Breaded Chicken Strips
Coat the strips in Earth Balance (soy free) mindful mayo, then roll in Panko crumbs seasoned with oregano, black pepper, and salt.
Dairy Free Meatballs
1 lb. ground beef
1 small onion chopped
1-3 cloves garlic to taste minced
1/4c. bread crumbs ( I did 2 T oatmeal, 2 T Panko bread crumbs)
1 T. ketchup
2 T. worcestershire sauce
1/4 t. red pepper flakes
1/4 t. dried basil
1/4 t. dried oregano
1/4 t. salt
Preheat oven to 375 degrees. Chop the onion and garlic and mix with the ground meat and rest of the ingredients. Place a layer of foil on a rimmed baking sheet. Thinly coat with a little olive oil. Begin to shape the meatballs. Bake in the oven for 20 minutes.
Serve with a jar of spaghetti sauce - many to choose from.
Garofalo pasta- a durham wheat pasta.
Other sides might include:
Pillsbury bread sticks.

Pinwheel Cookies
1 c. Earth Balance butter (or Spectrum Butter flavored shortening)
1.5 c. powdered sugar
3 c. flour
1 tsp baking powder
1 tsp. salt
1 T. coconut milk
1 T. vanilla
1/4 c. Cocoa powder
1 T. espresso or coffee
Sprinkles
Directions:

Directions:
- Cream the butter and powdered sugar
- Mix the flour, baking powder, and salt in separate bowl
- Add 1/2 of the flour/baking soda/salt ingredients to the butter/powdered sugar mixture and mix
- In the same mixing bowl, add remaining flour/baking soda/salt ingredients with coconut milk and vanilla and mix to form a large dough ball (add additional milk if necessary).
- Take half of the dough out of the mixing bowl. With the remaining dough in the bowl add the cocoa powder and coffee/espresso and mix until the dough is a smooth chocolate color
- Roll out both sets of dough into the same size rectangles and then stack them on one another. Run a rolling pin across them lightly to push the two sheets of dough together.
- Starting at the long side of the dough roll into a log (add sprinkles at the beginning of this step, if you want sprinkles)
- Refrigerate for 10 minutes
- Preheat oven to 350 degrees
- Remove dough and cut in 1/4 inch slices
- Bake for 8-10 minutes
- Let cool
- Enjoy
